I’ve used the Dutch oven technique on more conventional doughs, too.They couldn’t stop raving about it.Since I didn’t have the dutch oven it’s less artisan and more sandwich-y in terms of the crumb, and since I’m a beginning baker who’s not good at shaping yet, it looks like a giant (seriously – 8 x 16 inches!) ciabatta.

Happy Baking!-Jamie.Followed to the letter.Just made this for the first time with leftover baked sweet potatoes instead of the pumpkin and it turned out perfectly.

I’m sorry, I wasn’t being clear.I’m worried about over-straining, or not straining enough.If I were to over-strain, it would be too dense (a problem I have had in the past), if I were to under-strain it might be too wet.This is despite the crust being very dark.It also came out a bit flatter in shape than I expected.This is going to be good.

Hey, I came around on chocolate in banana bread, after all….I was very confident.The recipe made eight mini loaves.

Can I use bread flour instead of all-purpose flour? If yes, how will it affect the taste and texture?.i have to bring the rising bread into the bedroom with me at night to take advantage of the ac! otherwise it will rise completely in well under 8hours and won’t develop any complexity at all.I added 1/2 cup toasted walnuts and 1/2 cup apple sweetened dried cranberries.I baked @ 375 for 23 minutes.They rose beautifully and are moist and most importantly have a fantastic pumpkin flavor.

I pretty much just scooped it onto my flowered cutting board.Made these as a little rainy day snack for dinner! So good.First loaf came out good but 25 min in my electric oven was too much.No Knead Artisan Bread Recipe, Easy Bread Recipe.
